Grilled Brie

I know that summer is over now 😦 But the good news is that it is still grilling season (can anyone say tailgating?). Mr. Foodie and I love to roll our tiny grill out on the driveway and show off to our fellow condo neighbors while we sip fancy cocktails and use our phone as a jukebox. The other day we made grilled brie. That’s right – we popped the whole wheel of brie onto the grill and seared it. Ever have baked brie? Well this is the summer equivalent. Forget turning on the oven, this method leaves adorable grill marks on the rind and turns the delicious interior into melty goodness.

Grilled Brie with Honey and Black Pepper

Besides, the notion of grilling different courses appeals to me immensely. When I’m grilling out, the last thing I want to do is spend part of my evening sweating over the oven or the stove. Why not make some cold salads ahead of time, grill the entree, and then…grill the dessert. Or the appetizer. This brie could work for both.

Grilled Brie

Years ago my illustrious roommate, Becca Grawl, turned me on to the brie, honey, black pepper combination. We did it with baked brie. We did it with room temp brie. We did it with straight-from-the-fridge brie. It is heavenly. I typically like my cheese to stay squarely in the savory camp, but this combination of the earthy brie, sweet honey, and sharp pepper is just the ticket.

Grilled Appetizer or Dessert - Brie!

To pull off this stunning, yet simple, dish, unwrap your favorite round of brie or Camembert. Turn the grill to high heat or use the hot coals section. Pop the wheel on the grill (you can oil the grill ahead of time if you think it will stick – ours was just fine, but our grill cleaner wipes have a bit of oil in them). Close the grill for 5 minutes, then flip. You should see brown grill marks on the rind and you should be able to see the cheese soften by poking it with your tongs. Let the other side sear for 3-5 minutes and then remove to a platter. Drizzle honey on top and crack black pepper over all. You could also keep the honey and the black pepper grinder close so people can customize their brie bites to their liking. Either way you are in for a treat.
